ADELAIDE PIZZA FIELD GUIDE • OCTOBER 2026 The Margherita Has a Problem: It Could Be More Interesting An Adelaide pizza field guide for people who believe tomato and cheese deserve more than a cameo. A classic Margherita is magnificent when it is done properly. But there is a peculiar culinary orthodoxy surrounding it: a smear of red, a few white patches, one basil leaf, and everyone is expected to applaud the restraint. Restraint is admirable. So is flavour. The pizza worth pursuing Start with fragrant, well-fermented dough: ideally 24–72 hours of carefully controlled maturation, a lively rim, and enough strength to support its toppings without becoming a wet napkin. Flour names such as Caputo Pizzeria or Super Nuvola can be useful clues, but technique matters more than a bag’s branding. Then build a tomato chorus rather than a solo. San Marzano—preferably verified DOP— makes an elegant crushed base. Blistered cherry tomatoes contribute sweet, jammy bursts; a few fresh or late-added grape tomatoes add firmness and bright acidity. ¿Por qué no los dos? Quite. Just do not mistake three kinds of tomato for permission to empty a greengrocer onto a pizza. For cheese, fior di latte supplies melt and structure; drained Mozzarella di Bufala Campana DOP offers richer dairy character; Parmigiano-Reggiano or Grana Padano brings savoury depth. A few post-bake dollops of stracciatella add luxurious creaminess. Gorgonzola Dolce is better reserved for a separate, more assertive variation: blue cheese is rarely content to remain a supporting actor. Adelaide’s contenders Meccanica · Bowden — The custom-build candidate. Reported 72-hour sourdough, San Marzano and access to fior di latte, Parmigiano and gorgonzola make it a compelling starting point. Etica · Adelaide — The purist’s benchmark. AVPN-style Neapolitan craft, DOP San Marzano claims and a buffalo-mozzarella option; its delicate centre rewards a lighter hand. 400 Gradi · Norwood — Order the Bufalina as the starting point: San Marzano, cherry tomato and listed DOP buffalo mozzarella already deliver two tomato expressions.ADELAIDE PIZZA FIELD GUIDE • OCTOBER 2026 Anchovy Bandit · Prospect — The indulgent wildcard. Its documented use of Vannella stracciatella makes a restrained post-bake finish particularly tempting. One Sneaky Cheetah · Ridleyton — The local-originality contender. A distinctive house Roma-tomato sauce and wood-fired character challenge the notion that an Italian designation automatically wins the flavour contest. Pizza e Mozzarella Bar · Adelaide — An appealing cheese toolkit, including gorgonzola and Grana Padano. Worth asking about a tomato-forward modification. Blue Velvet · Mile End — A dough-first alternative, with a reported long biga-based maturation and stoneground flour. Tony Tomatoes · North Adelaide — A useful alternative for diners prioritising a base with more structural confidence under rich toppings. The sensible excess: one ideal order A long-fermented, aromatic crust; a modest layer of crushed San Marzano; fior di latte; a little well-drained bufala; finely grated aged hard cheese; several blistered cherry halves; and a few grape-tomato pieces added late. Finish after baking with tiny spoonfuls of stracciatella, excellent extra-virgin olive oil and basil. Keep the centre dry enough to pick up a slice without requiring civil engineering. The alternative: San Marzano, fior di latte, Parmigiano, Gorgonzola Dolce and cherry tomato. Leave the bufala and stracciatella out. This is a different pizza, not a competition to see how many cheeses can be named before the crust files a complaint. The verdict For a disciplined classical Margherita, start with Etica. For a DOP-bufala-and-two-tomato starting point, try 400 Gradi. For an ambitious custom pizza, ask Meccanica or Anchovy Bandit what their kitchens can actually accommodate. One Sneaky Cheetah deserves a separate tasting on the strength of its own sauce and dough, not a penalty for failing to imitate Naples. The crucial caveat: specific DOP certifications, flour brands, fermentation schedules and off-menu modifications are not uniformly independently verified. Menus and suppliers change; ask the restaurant before making a pilgrimage. A premium ingredient list is evidence of ambition, not proof of a delicious pizza.
